Tell us a bit about yourself and your role
I am proud to be the Head Chef at The Three Daggers. I’ve been a chef for over 20 years and my passion for cooking comes from the calmness and serenity that the creativity of cooking brings to mind. When I was a young lad, my mother marched me down to the local restaurant to get me my first job working as a kitchen porter. I found myself watching the chefs and thinking ‘I could do that’, I watched and learned and worked my way up and the rest, as they say, is history…!
What do you like best about your role?
The incredible free reign that I have over the menu which allows me to experiment with the fresh local produce which we grow at our own farm in the village – a real farm to fork food ethos which we’re lucky to be able to measure in metres rather than miles! Stepping outside the kitchen I enjoy building relationships with our local farmers and growers to really get the best produce from the best people – our locals.
Where are your favourite places to visit in Wiltshire and why?
My very favourite is Heaven’s Gate which overlooks the Longleat Estate - a truly beautiful view that explains itself.
Do you have any hidden Wiltshire gems that you’d like to share with our readers?
Erlestoke Woods – this may not particularly be a secret for our locals at the Three Daggers, but it is still one of the best walks in the area in my opinion.
Where’s your favourite Wiltshire picnic spot?
There is a lovely little picnic bench overlooking the river in Box. It nestles in a hidden little nature reserve area with masses of wildflowers and wildlife.
Where are your favourite places to eat out in Wiltshire and why?
The Three Daggers – obviously! I am proud to cook and serve lovely, seasonal dishes carefully curated from local ingredients and game when they are at their very best. Our Woodshed Pizza Shack is also open serving wood-fired sourdough pizzas during the summer months. The village playpark is also next to our outdoor stretch tent and terrace area – perfect to keep the children happy!
The Quarryman’s Arms serves consistently good pub food with a lovely ambience and a stunning spot for a sunset.
