Tell us a bit about Allium and its history
Allium opened in October 2019, and is the first business venture for Tim and his family. Opened with great reviews and all seemed to be going well until, 5 months in, Covid hit and we went through a lengthy period of uncertainty, open/closed etc. During this time we managed to build a great customer base/following who have continued to support us.
Tell us about the new concept at Allium, offering tasting menus.
We now offer a more casual approach to dining, allowing diners more freedom and choice. When we did limited time tasting menus previously they were very popular, so we have decided to make them a permanent fixture on the menu.
Tell us what visitors can expect when they choose Allium?
A great welcome, friendly yet professional. Excellent choice of quality wines, local beers and other drinks. The food menu is led by seasonality, with an emphasis on freshness, flavour and quality. Part of our new concept is to have the chefs occasionally serving the food so that we can break down the barriers between the guest and the kitchen.
What do you like best about your role as both Owner and Head Chef at Allium?
The creative freedom, not being bound by the vision of others, but only by myself. I can source the best suppliers that share a similar outlook to sustainability (we all need to do more) and quality.
Where are your favourite places to visit in Wiltshire and why?
We have enjoyed quiet walks at Lords Walk in Amesbury, and days out at Cholderton Rare Breeds Farm. Bowood House is a great day out with the family/kids.
Do you have any hidden Wiltshire gems that you’d like to share with our readers?
Lords walk for a peaceful walk, and there are fairy doors in many of the trees which is lovely for young children to find.
