Chef Peter Vaughan worked as a chef saucier for a Michelin star chef, who trained under the famous 'Toisgros brothers' in Lyon in their 3 Michelin starred restaurant, which was world famous for its Incredible sauces. On this course you will learn to make 3 of the most iconic 'dinner party' sauces that are served in most 5 star Luxury Hotels & restaurants.
On the menu:
- Hollandaise: you'll learn The A to Z of this internationally known classic Dutch sauce, all the way from clarifying to how to correct it if the sauce splits (as it often does at the worst possible time!)
- Sauce Diane : one of the most famous 1950/1960's American sauces - ideal with steak, grilled mushrooms, or roasted squash
- Bearnaise: a unique tarragon reduction turns this sauce something truly spectacular.
The evening will finish with supper and wine and you will have plenty to away with you.
Guide Prices
£60 for hands-on cookery class, finishing with some of what you've made with a glass of wine or non-alcoholic alternative, with plenty to take home and share.
