A Taste of Italy Cookery Class With Peter Vaughan

Peter Vaughan, Executive Chef/Managing Director of Vaughan's Kitchen, a highly qualified and experienced award-winning chef. He has worked with Italian chefs in the past and has learnt many tips and techniques that will help you make authentic Italian food.

In this class you will learn how to make:
- Wild mushroom & truffle arancini - making rissotto then arancini, which translates as little oranges
- Tuscan pazanella salad - a peasant salad of seasonal ripe ingredients using up stale bread
- Ragu di Bologna - traditional Italian meat sauce using the principles of soffrito, the 'holy trinity' of Italian cooking
- Perfect pannacotta - with just the right amount of 'wobble'

The session will finish with supper (including wine) and you will have some goodies to take home.
