Catherine's passion for Spanish dishes is because of the vibrancy of this cuisine. She has worked with Spanish chefs in the past and has learnt many tips and techniques that will help you make authentic Spanish food. The colours and flavours all 'sing' on the plate and in your mouth, they make you feel as if the sun is shining, even on a cold Winters day in the UK!
This all day course is designed so that you can really get involved with Spanish cuisine.
It is suitable for all levels of culinary ability, as the group is small so the competent can be 'stretched' and the less competent can be supported.
On the menu will be:
- Machego and broad bean tostados
- Cocido des montanes (mountain stew made with pork shoulder, chorizo, and chickpeas)
- Papas a lo pobro (literal translation "poor mans potatoes")
- Spinach with cumin and pine nuts (this touches on the north African influence)
- Saffron aioli
- Croquetas de jamon (ham croquettes)
- Champinones al Ajillo (garlic fried mushrooms)
- Tarte Santiago
